While the scientific evidence linking the impact of food over health may be overwhelming, it’s presence, until recent years, has been largely hidden from, not just public view, but from that of the health practitioners on whom we have always relied for health guidance.  And to say the price we’ve paid for that lack of awareness is exhorbitant would be an understatement.

Thankfully, a number of determined and unflappable practitioners in research as well as in medicine, have soldiered on.  They did so despite considerable opposition from both industry and, in more recent years, government as funding for oversight of our protective agencies has waned.  We all owe a great debt of gratitude to these men and women.
